Spicy Indian Stir Fry
Sambharo is a popular spicy Gujarati stir fry dish. Usually it's made with carrots, cabbage, chilies, and basic Indian spices. This tasty and easy-to-cook side dish is usually eaten with rice and roti. Think of it as coleslaw that's eaten with fries or a burger. Only, this prep is made the Indian way. No mayo and no vinegar. This is such a simple side dish and a healthy replacement for a rich curry.

2 - 4 persons; 4 portions
INGREDIENTS
Ground Turmeric * 1/4 tsp
Red Chilly Powder * 1 tsp
Green Chilly * 3 pcs
Canola Oil * 2 tbsp
Cabbage * 1/2 pc
Salt * to taste
Carrots * 3 pcs
Asafoetida * 1 pinch
Cumin Seeds * 1/4 tsp
Mustard Seeds * 1/4 tsp
Indian Green Chilies * 4 pcs
PREPS
- Wash chunks of cabbage, carrots, and green chilly.
- Chop the veggies and keep separately in a plate. Or, use ready-made chopped veggies if available.
MAKING IT
1. Heat the oil in a frying pan on medium heat. Once hot, add the asafoetida, mustard seeds, and cumin.
2. As the spices crackle, add the chopped green chilly, cabbage, and carrots. Stir fry for 1-2 minutes to keep the crunch.
3. Add salt, turmeric, and red chilly powder. Stir fry for another minute and mix well.
4. Remove in bowl without a lid to avoid overcooking. Once cool, you can cover the stir fry mix.
5. Serve and enjoy! Enjoy it with rice and yoghurt. Or with an Indian bread you love.
