Diving Into Air Fried Eggplant Boats

If you're a an eggplant lover like me, you'll enjoy making this one! This dish is a quick and low-effort creation that you can whip up within 30 mins. For those on a weight loss mission, this one's for you. Eggplants are rich in antioxidants and it's mind blowing how filling this yoghurt-filled dish can be.


I recommend half an eggplant if you want to pair with other dishes. You can also make a meal out of a whole one. This creation fuses sour, sweet, salty, and spicy notes. And remember, you can always switch up the spices, herbs, and cheeses to your taste and palette. These eggplant boats are effortless, delicious, and healthy. Wait no longer; dive in!

 

SERVES

2 persons; 4 portions


INGREDIENTS

Sriracha sauce * to taste

Chilly flakes * to taste

Garam Masala * 1 tsp

Cooking oil * 2 tbsp

Cilantro * to taste

Salt * to taste

Honey * to taste

Eggplants * 2 pcs

Cajun Spice * 1/8 tsp

Black pepper to taste

Red Chilly Powder * 1 tsp

Mozzarella cheese * to taste

PREPS

- Wash the eggplants, remove the stem, and slice both into half.

- Make criss cross cuts in the eggplant meat without cutting into the skin.

- Put the yoghurt in a bowl and mix the chilly, garam masala, Sriracha, Cajun spice, pepper, salt, and chilly flakes.

MAKING IT

1. Preheat the air fryer onto the air fry/bake mode and set the timer for 25-30 mins.

2. Once preheating is done, place the sliced eggplants into the air fryer pan. Brush oil over them equally and drizzle some into the cuts. This helps the eggplant to cook well.

3. Cook until the eggplants are supple. Check with a fork and remove once ready. They need to be cool before you can creat your eggplant-yoghurt boats.

4. When warm, spread some shredded Mozarella cheese over the eggplants so they can melt into the eggplant.

5. Once the eggplants are cool, pour the yoghurt mix over the eggplant so it’s contained like boat.

6. Drizzle honey, Sriracha, and chilly pepper flakes.

7. Garnish with mozzarella/goats cheese and cilantro.

8. Dig in, enjoy, and let me know how it goes!
