Air Fried Banana Bread
Last week, I baked banana bread muffins in an air fryer for the first time. But they didn't turn out as I'd hoped. I was simply blown away with the idea of using a Vitamix and air fryer to quickly whip up a banana bread. But baking doesn't quite work that way. Just as with oven baking, aerating batter does air fry baking wonders. So where did I go wrong?
Firstly, it's perfectly fine to use a Vitamix to quickly blend your batter. However, only add all-purpose flour once you're done and gently mix using a spatula/whip. Also, if you're using butter, skip oil if you want to avoid smoke. If you're not into an eggy aftertaste, use one egg. All things considered, let me know you how it's done.

2-4 persons; 6-8 portions
INGREDIENTS
All Purpose Flour * 1/2 cup
Ripe Bananas * 2 pieces
Butter * 1/4 cup
Milk * 2 tbsp
Brown Sugar * 1/4 cup
Medium Eggs * 2 pieces
Chopped Pecans * 1/8 cup
PREPS - Crack the eggs, peel the bananas and put in the Vitamix.
- Measure the butter, milk, and sugar and add to the Vitamix.
- Measure the flour and keep separate in a mixing bowl.
- Chop pecans into small pieces if whole.
MAKING IT
1. Blend all ingredients except the flour in the Vitamix at a medium speed setting for up to 1 minute.
2. Put the Vitamix contents in a mixing bowl with the flour and pecans. Gently stir to aerate the batter before you transfer to a baking pan that fits in the air fryer.
3. Set the air fryer bake setting to 300 degrees and bake for 30 minutes.
4. When complete, poke the banana bread with a knife. Remove the loaf to cool at room temperature.
5. Drizzle powdered sugar over your banana bread slices and enjoy! It pairs perfectly with a cup of chai or coffee.
