Yoghurt Sandwich

I always say that if I was left stranded on an island and had only one choice of food to survive, it would be yoghurt! As illogical as it might sound, wouldn't you agree? Well, at least for me, it is one of the most nourishing and versatile basic foods that you can transform into a variety of nourishing dishes.

This time around, Rahul thought about trying something different. Imagine a panini but with a dairy twist ⁠— it's delicious, super easy to make, and you can use ingredients that are readily-available in your kitchen. The only thing we recommend is that you enjoy this sandwich within a few hours of straining the yoghurt as it gets tart the longer you keep it. So what are you waiting for? Dive in and get your groove on!

SERVES

2-4 persons; 4 servings

INGREDIENTS

Baguette slices * 6 pcs

Green Pepper * 1/4 pc

Sweet Corn * 1/4 cup

Plain Yogurt * 1 cup

Butter to taste

Salt to taste

Sriracha * 1 tbsp

Black Pepper * 1/8 tsp

Green Chutney to taste

Cheddar Cheese to taste

Chopped Cilantro * 1/4 cup

PREPS

- Put the yogurt in a muslin cloth and strain for 4-5 hours until the whey is significantly removed. For best results, place a heavy object on top of the cloth in a strainer.

- Wash and dice the green pepper into small pieces.

- Wash and microwave the sweet corn for 1-2 minutes, especially if frozen.

- When ready, remove the strained yogurt into a bowl. Add sriracha sauce, salt, black pepper and mix well.

- Add the green pepper, sweet corn, shredded cheese, cilantro and mix into the yogurt. You can optionally add dry fruits, fruit pieces, or nuts to the sandwich mix. You can also sweeten the sandwich mix by adding sugar or honey.

MAKING IT

1. Heat a flat pan on medium heat and slightly butter pan.

2 Add butter on each side of the bread slice. and spread cilantro chutney on one side of the bread.

3. Add the yoghurt mix between the slices and put the sandwich on the pan to toast on each side.

4. Once ready, garnish with chutney or other condiments.

5. Serve and enjoy!
